What is trending in food for 2013.?

• German : Oktoberfest (book early), German themed Christmas in July – think pretzels, cold meats, pate, gourmet sausages, sauerkraut and kessler… YUM
• South American food is becoming more popular as we embrace the flavours and cooking techniques
Research from UK and USA sites have indicated a trend towards 1. Peruvian cuisine; including Cerviche (The contestants on TV show My Kitchen Rules included it in their menu last week)
2. Dude Food; less fancy -pancy and more street food style – hearty, great flavours and in-between a canapé and a main meal – just genuine food
3. Table Sharing; social dining as opposed to a set 3 course menu – instead it’s almost like an individual buffet on each table this could be a meat dish with an array of sides and condiments enabling guests to interact more and also choose their flavour preferences.
4. Enviro conscious; you will see more eco plates, bamboo over plastic
5. Cooking techniques involving smoking and the use of liquid nitrogen will also become more popular in 2013
With the movie the Great Gatsby due for release on screens in late May you can expect an increase in prohibition parties. The 1920’s era of the secret society and there are some great props and venues just perfect for hosting such a theme.
There are exciting times ahead as more small bars open, mobile food vendors become increasingly popular, chefs launch new restaurant and dining concepts and TV shows about food and cooking competitions continue to attract loyal followers just as much as they do critics. |
